I bought supermarket brand froot loops, webber was very sad about this. he believes supermarket brand might not even contain real froot.

sweet pies

I couldn’t remember my dream on waking, I did wake in the middle of the night and thought that I should write it all down as I could remember it all then but alas I did not do this! Putting a notepad next to the bed tonite.

However I did make a pie from Not Quite Nigella’s recipe, first time making pastry (sans food processor, just crumbed that butter & flour with my BARE HANDS) and it seems ok? I started the pastry before anatomy elective*, let it rest for 3 hours while I was there and then finished it off.

Look at that fancy lattice! Ok so the edges are weird cos in my head I was all “oh i will fold these over like a rustic pie” but you gotta bake it with baking beads/rice/beans first and I thought well I need to fold the edges over first but then only 2 of the edges stayed like that and cooked into position so it’s looks pretty crazy now.

Also I had to cook it way longer than what was in the recipe (about an hour all up) cos the lattice wasn’t cooking at all.

Going to take this to uni tomorrow cos it is my last PBL session with Group G! It’s very sad, you get very chummy with your little group of 8 but next semester we’ll get all switched around again.

Oh man it is midnight! I was meant to have finished my presentation for PBL by now.

Here is something I was going to email to Shara when I was at Coles but Optus 2G/3G has been pretty woeful lately, anyway just wanted to distress her with more weird fruits you can get in a tin

*my anatomy prof has had stern words with me because I am weeks behind in my assignments, but tonight was a really great session in the lab and a lot of important stuff for the med science exam has been cemented into my head. i totally own the thorax, and am getting better at the cranial cavity, but the brain is still crazy.

I forgot half the vegies, but this is full of legume deliciousness. Popped a spoon of Tofutti in there and served with V8 juice.

chocolate & peanut butter brownies

now as a complete contrast to my pretty healthy dinner of spinach and ricotta cannelloni, i made my favourite recipe for brownies taken from a copy of Good Taste magazine that i stole last year from a housemate i didn’t particularly like

these brownies are pretty easy to make but should be avoided completely if you are in any way limiting the sugar or fat content of your diet. however if you are looking to increase the deliciousness content i heartily recommend
i made double the mixture but this was slightly problematic as it would’ve worked better with 2 smaller tins, but i only had 1 large one available. this resulted in a very undercooked and thin batch of brownies. also i used self-raising flour simply because i didn’t have any plain and it was essentially fine (apart from a little over spillage from the pan in the oven…)

while i made these i listened to the fantastic album ‘Hideaway’ by The Weepies, definitely check them out if you enjoy sweet, folksy music with male and female vocals and harmonies. my favourite track from the album is ‘Wish I Could Forget’ which is a song to listen to in the sunshine

Chocolate & Peanut Butter Brownies (makes about 12)

ingredients

  • 150g/5oz dark chocolate, chopped (i used button melts)
  • 100g/3.5oz butter, chopped
  • 1 cup caster sugar
  • ½ cup plain flour
  • 2 tbsp cocoa powder
  • 2 eggs
  • 3 tbps peanut butter (crunchy or smooth)

method

  • preheat oven to 160˚C/320˚F
  • grease and line a small brownie pan, make sure you line it with baking paper otherwise you are never gonna get this sucka out

  • put the chocolate and the butter in a heatproof bowl and sit in on a small saucepan half full of water, over a high heat on the stove

  • keep stirring until it becomes lovely and smooth, then set the bowl aside (the original recipe stipulates using a metal spoon)

  • in another large bowl, put in the sugar, flour and cocoa and stir to combine (i accidentally added the eggs at this stage, but it didn’t make a big difference)

  • then pour in the melted chocolate mixture and the eggs and stir until just combined

  • pour everything into your pan

  • smooth it out all nice

  • then put in teaspoon-sized blobs of peanut butter over the top of the mixture

  • using a flat-bladed knife make swirls in the mixture

  • pop this in the oven for 40min (the original recipe stated the brownies are done when crumbs cling to a skewer inserted into the middle of the brownies but this thing is so rich that you sort of have to play this by ear. this does harden up a little once it cools down)
  • when they’re done, take out and let the pan cool right down before attempting to take the brownies out

yesterday i started my second day of hospital orientation at 8am, lined up some supernumary shifts next week in the places i want to work (ICU, kids ward & emergency) and then at 2:30pm was poached for an afternoon shift in ICU until 9:30pm

i have to say that ‘Intensive Care Unit’ is a bit of a misnomer, it is as intense as any HDU (High Dependency Unit) i have ever worked in. they can support a ventilated patient for 1-2 days but anyone who is actually sick needs to be flown out. last night i was looking after 2 ladies in with cardiac issues who were both exceptionally stable. it is a huge change for me to be working with adults again, i don’t have to worry about juggling multiple feed times and nappy change times, or worry about who is labouring in delivery suite. but i do have to remember that a heart rate of 140 in an adult is not okay.

today i dyed my hair a vague shade of ginger, wore a nice dress and washed my sheets

spinach & ricotta cannelloni in the ‘dale

life is getting organised in my new home. i now have my cats up here with me, started hospital orientation today and haven’t had any mysterious chest pain since moving.

but now in the spirit of good food blogs everywhere (quick plug for Mike Spoodle’s Ugly Food for an Ugly Dude) i decided to take you through one of my favourite meals that i can actually make without a recipe, and i took photos along the way which was relatively awkward considering my only means of doing this is with the inbuilt camera in my macbook.

the amount of photographs is entirely unnecessary, but they were entirely fun to take

so!

Spinach & Ricotta Cannelloni (serves 5-6)

ingredients:

  • large bunch of spinach/silverbeet
  • small onion
  • 500g/1lb smooth light ricotta
  • 2 eggs
  • ½ cup grated parmesan cheese
  • tin of crushed tomatoes (i usually buy one with garlic & oregano)
  • a box of cannelloni shells
  • ¾ cup grated cheddar cheese

method

  • preheat the oven to 200˚C/400˚F
  • cut off the white part of the spinach and give the green part a rinse

  • chop up the spinach roughly as well as the onion

  • sauté the onion in a large frying pan with a bit of olive oil, then add some water to the frying pan and toss in the spinach

  • pop a lid on and let it steam up and wilt down. drain off the water and set aside

  • in a mixing bowl, chuck in the ricotta, eggs, half the parmesan and a generous amount of cracked pepper

  • pop the spinach in the bowl and mix well
  • in a large baking dish, tip in 1/3 of the tin of crushed tomatoes and spread it around so it coats the base of the dish
  • now here is the messy part! you can use a piping bag to fill the shells, but i find it’s easier and less wasteful to just squish in the mixture with your hands. just keep a thumb at one end to stop the filling falling straight out

  • keep going until your dish is full, any spare mixture can be used to plug any gaps between cannelloni shells
  • tip the rest of the crushed tomatoes over the top and spread it around, then cover with the cheddar cheese and remaining parmesan. crack some pepper over the top for good measure
  • cover with foil and bake for 20min

  • remove foil, turn heat down to 180˚C/350˚F and bake for a further 10min or until the cheese has gone golden and a fork easily pierces the cannelloni shells

i served mine with some garlic bread and a salad and it was friggin’ delicious
